Mists of Pandaria Marathon – Foods: Stuffed Mushrooms

I previously posted recipes for Piadina and Focaccia, which will certainly be on the menu next week. Here’s another idea for some gamer food: Stuffed Mushrooms.

Granted, it takes a little bit of time to prepare these, but half an hour away from keyboard can’t hurt during a gaming marathon. 😉

Here’s what you’ll need for the stuffed mushrooms:

  • Mushrooms – I used champignons
  • 1 onion
  • some bacon cubes
  • cream cheese, plain or with herbs
  • some grated parmesan
  • freshly ground pepper, cayenne pepper, dried herbs, paprika

Finely dice the onion, remove the stems from the mushrooms and dice them as well. Hint: don’t wash mushrooms in water, but use a brush to clean them. Mushrooms act like a sponge and soak up water, making them all – well – watery and lose taste.

Next, quickly stir-fry the onions, bacon and diced mushroom stems in just a tiny bit of oil.

Next, transfer to a little bowl and add about two tbsp. of cream cheese, freshly ground black pepper, a dash of cayenne pepper, dried herbs and a bit of paprika. Mix well.

Now comes the tricky part. With the help of a small spoon, stuff the filling into the mushroom heads. Place them in a heatresistant form and sprinkle with parmesan and drizzle with a little bit of olive oil to help them cook. Put in the pre-heated oven at 200° Celsius and bake for approx. 20 minutes.

You can serve them just as they are or with a side of salad (in the picture below it’s a mix of tomato, onion, cucumber and mozzarella) or simply some rice.
